Angie Adventure's Chickpea Quinoa Curry.
It's -24 C where I am now, so all I want to eat is comforting warm things! Luckily this vegan dish is full of winter staples, so I didn't have to leave my house for supplies! (It's also gluten-free).
1 cup cooked quinoa
1 can chickpeas, drained and rinsed
2 medium carrots, sliced
4 stalks celery, sliced
1 large onion, thinly sliced
4 tomatoes, chopped
2 cloves garlic, finely diced
1 chunk fresh ginger (1 inch x 0.5 inch), finely diced
3 cups veggie stock
1 tbsp hot curry powder
1 tsp turmeric
1 tsp ground cardamon
sea salt and ground pepper
1/ Start cooking your quinoa in a small pot.
2/ In a large pot, cook your onions and garlic on medium low until they are transparent.
3/ Add ginger, curry powder, turmeric, cardamon, and salt & pepper. Mix together.
4/ Add stock, tomatoes, celery, and carrots. Simmer for 45 minutes.
5/ Taste and adjust spices/salt and pepper as needed
6/ Mix in chickpeas and quinoa at the end to heat up.
