Pretty Eats: Vegan Gluten-Free Zucchini Fritters
2 small zucchini or 1 large
½ cup gluten free flour (I've tried both brown rice flour and Bob's Red Mill All Purpose Baking Flour with great success. Feel free to experiment with quinoa, coconut, chickpea, or tapioca flours as well!)
1 clove garlic finely chopped or grated
1 tsp fresh lemon juice
Generous sprinkling of your favourite dried spice (oregano, savory, rosemary, thyme, basil, sage, or you can mix them all together!)
Coconut oil or Olive Oil for cooking
1/ Grate your zucchini using either a hand-held grater, mandolin, or food processor. Leave in a bowl or strainer with salt sprinkled over it for 10 minutes.
2/ When the 10 minutes are up, give the zucchini a good squeeze with your hands, releasing the excess moisture. Transfer to a mixing bowl and add your flour, garlic, lemon juice, spices, ground pepper, and a little extra salt.
3/ Mix ingredients together with your hands, then firmly shape four patties.
4/ Cook in a pan on medium heat with enough oil to cover the surface of the pan. Cook both sides until golden brown. Eat up!
