Pretty Eats: Mulled Wine For The Holidays

Angie Adventure does it again, but this time she not only warms our hearts with something delicious, but makes our Christmas spirit 3 times brighter. Warm wine, pomegranate, gorgeous teacups... we'll be there before Santa... SANTA!

It's that time of year again, when I make a big pot of mulled wine and promise not to consume the entire thing. It can't be helped - the smell makes my apartment like something out of a really great Christmas movie, and it's so delicious - as I watch Elf for the 4th time I can't believe it's all gone before he hits the escalator again. May as well - it's Christmas and who will know - but the neighbours I just invited over for New Years....

2 bottles of 750mL or a 1.5L  red wine (feel free to cheap out here)
¼ cup Port or Fortified wine (optional, but tasty)
3-4 clementines
1 lemon
1 cinnamon stick + 1 for each cup (decoration)
6 whole cloves
½ tsp allspice
1 slice of fresh ginger
1 vanilla pod or 1 tsp vanilla
2 cardamon pods or ¼ tsp dry cardamon 
2 tbsp raisins (optional)
3 tbsp sugar or honey (+ more if you have a sweet tooth)
Pomegranate seeds (for decoration and munching)

1/ In a large pot, pour in your wine.
2/ Wash outsides of clementines & lemon, and slice, leaving the rind attached.  
3/ Add all of the ingredients, except the extra cinnamon sticks and pomegranate seeds. 
4/ Simmer on low (without boiling) for 25-30 minutes, occasionally squishing the fruit slices with a spoon to release more of their flavour.
5/ Strain and serve hot with a cinnamon stick and pomegranate seeds.
